Scrummy Warming Autumn Rhubarb-Apple Compote


This recipe is a fantastic Autumn brickie to kick start your digestion and keep you full of energy for you day of doing as the mornings start to get cooler



Scrummy Warming Autumn Compote



Ingredients: 
2 1/2 cups chopped rhubarb
2 apples (red or green) peeled, cored and chopped
1/3 cup organic brown sugar
1/2 cup water 
1/2 teaspoon clove powder or 5/6 cloves
1 teaspoon cinnamon

Simmer all ingredients on low heat until fruit is soft and mushy.
You can puree in a processor if you like it extra smooth but I prefer the lumpie bits in it !
Makes approximately 3 cups
Refrigerate or eat warm

This compote is fantastic ~
~ on its own
~ with organic muesli or granola and sheeps milk yogurt
~ with pre-soaked walnuts and almonds

Health benefits of Rhubarb:
~ rich in dietary fibre
~ helps prevent cancer
~ can lower cholesterol
